The First Seafood Laksa

So, I made my first seafood laksa today. While overall, it was alright, there are probably a few things I can tweak next time around to improve the overall flavour:
- I need to prepare the prawns better next time. Shells off, etc.
- Find another brand of coconut milk. The one I got this time was too creamy, which made the sauce a bit strange.
- The seafood should be cooked in the laksa sauce, rather than cooked separately, so you infuse the laksa with the flavour of the seafood.
- The vermicelli noodles should be prepared separately to the Hokkien noodles, as they cook at different rates.
- I need a different type of chilli oil – one more for flavouring rather than spice.
- Calamari should be the last seafood item placed in the pot, because if you cook it too long, it’ll go rubbery.
Overall, it wasn’t a bad laksa – it was good enough to not require me to give a blowjob to offset any bad tastes. A few more goes, and it could quite possibly be the world’s best!

1. buy shelled, headless prawns (save money not paying for prawn heads, and save time)
2. Ayam coconut milk powder – add water to desired consistency – cream or milk.

4. Dip ‘em in hot water then fish ‘em out
5. Sambal Olek (straight-up chilli sauce) or Belacan (shrimp and chilli) – Malay/Indo chilli sauces with lots of flavour. Just add a teaspoon per bowl.

I’m glad it went well! Learning to cook new things is always part exciting, part nervewracking. At least for me. I don’t like to mess up and end up with a wreck of a dish. Especially if there is company involved.
Maybe in a few weeks you can make it again and treat your parents. Practice and a bit of buttering up never hurt anyone. =)
