Cheese Baked Potato and Bacon Oysters

It’s rare for me to give out special recipes here on Jingwen (in fact, I’ve only done it twice before, and one was slightly tongue-in-cheek), but my recent experiments in the kitchen have turned out a winner.
This is a fairly complicated, and not particularly filling standalone meal, so it really is best suited to being an appetiser at a fancy dinner party, should you be the type to give dinner parties.
Ingredients
- Oysters (Two for each person)
- Potatoes (One large potato for every two-three oysters)
- Bacon (One rash of bacon for every potato)
- Herbs (of your choice)
- Butter
- Milk
- Grated cheese
Method
- Prepare mashed potatoes as per normal
- Cut bacon rashers into small chunks, and fry until cooked thoroughly
- Mix bacon bits and herbs into the mashed potatoes
- Wash and clean oysters thoroughly.
- Fill up the oyster shell with the mashed potatoes/bacon bits/herbs. Pack it in tight, with no gaps.
- Cover the potato mash with grated cheese.
- Place the oysters on a tray, and bake in the oven until cheese is golden brown and entirely melted.
- Serve with a drizzle of lemon sauce.
It sounds like a strange combination, but it actually works really well! It can obviously be adapted for any type of seafood, or really, anything that can be stuffed (turkeys? chickens?), but I personally prefer oysters.

This recipe seems pretty good :).
I’d just substitute the bacon for something else.

Sounds interesting! My mom does that with just the potatoes… like, when she makes the mashed potatoes, she puts them back in the potato skins (she cut the potatoes in half, long-ways) and then puts cheese on and bakes them. MMM.
I’d say that I’ll try your recipe but alas… no bacon for me! Heck, no oysters either, for that matter.

I loooove oysters. So far I’ve only had them just steamed (delicious!) but your recipe sounds mouth watering too. I’d love to try it for myself some day.
