May 19 2007: Tuna Salad a l’Amanda

This is what I make every day to take to work for lunch. It’s basically a healthy, simple and fast alternative (thank god for canned goods!) to spending $10AUD every day on a simple salad roll from a cafe. Depending on the price and quality of ingredients at your local supermarket, the average price of this meal is $4AUD…a huge saving. As I like to think of it, it only takes me quarter of an hour to earn enough money to cover lunch for that day.

Yes I am that much of a miser that I like to save $6 on lunch. Considering I work three days a week, that would equate to $936 a year, or 52 hours work, or seven Ralph Lauren jumpers, or two Willow dresses, or seven pairs of boots, or a two-week holiday in the tropics. You take your pick: indulgence in clothing and holidays, or indulgence in food? I know which I prefer.

Anyway, this recipe serves two, or alternatively, you can eat one portion and place the other portion in the fridge (cling-wrapped!) as it can keep for up to two days without going bad.

Tuna Salad a l’Amanda

Ingredients

Method

  1. Empty corn kernels, kidney beans and flavoured tuna (including juice in cans - this acts as the dressing!) into a large salad-mixing bowl
  2. Chop tomato, cucumber and lettuce into slim slices and add to bowl
  3. Season with salt and pepper to your liking
  4. Mix thoroughly, then serve

Tadah! Fast, easy, simple, tasty.

  1. I’m like you Amanda. I prefer indulgence and clothing to food. Does it make us unwise (wonder if that’s a word) ?

    Thanks for the recipe. I’m tired of making pasta to save time and money….Tuna salad is way healthier.

  9. Ahh, that sounds like something my mother would suggest. I’d just go for a plain and simple Nutella sandwich … not as healthy as you ;).
